Red Quinoa

December 29, 2008
Crunchy and hearty, and full of protein.

Crunchy and hearty, and full of protein.

Red Quinoa deserves its own posting.  Maybe it’s own blog.  I had no idea it was that good.  I’ve had regular quinoa and it was good, especially when disguised by feta and dinosaur kale.  But red quinoa is amazingly good all by itself.  And easy.  So easy.

1 cup red quinoa

2 cups water

pinch of salt

1/2 tbsp butter (optional)

Prepare in rice cooker or follow directions for quinoa on the stovetop.

Lemon Dill Vinaigrette

Seriously, how do you spell Vinaigrette?  I had to look it up.

I finally figured out how to make an emulsion, and it paid off.  This is very simple and quite tasty.  I like to serve it with salad greens, green cabbage (the crunch is so rewarding!), carrots, cucumber, avocado, and goat cheese.

1 tbsp    lemon juice
⅛ teasp    salt (or less)
⅛ teasp    black pepper
⅜ teasp    sugar
¼ teasp    dried dill
¼ cup    olive oil
¼ teasp    dijon mustard

Mix lemon juice, salt, pepper, sugar, and dill.  Slowly pour in olive oil and whisk to combine.  Add mustard and whisk to combine.

Pumpkin Bread and “Orange-bottom” cupcakes

December 27, 2008

As a kid, I LOVED black-bottom cupcakes.  The ones that were rich, moist chocolate with sweet cream cheese centers.

My wife LOVED pumpkin pie, pumpkin bread, and anything with holiday spices (nutmeg, cloves, cinnamon, etc.).

Here then, is the perfect combination of treats that evolve from a single recipe and a single pumpkin.

Thanks to Gluten-Free Girl, I have a batch of just-out-of-the-oven sugar cookies (recipe at http://glutenfreegirl.blogspot.com/2008/12/sugar-cookies-and-slowing-down.html).

Roasted Chicken (with Herbs and Garlic) and Vegetables

Roasted Chicken

I love the Joy of Cooking.  It never fails.  I always go out looking on the Internet for recipes at Epicurious.com, or just using a hope-this-gets-me-somewhere Google search.  But half the time, I just think… hmm… I’ll see what the classic cookbook has to offer.

I served this with a brown/wild rice mix:

Blueberry Muffins

December 15, 2008

Mmm... hot from the oven.

Mmm... hot from the oven.

Okay, I cheated and used Whole Foods’ 365 brand Gluten Free Muffin Mix, but it was so worth it.  My son and I made the muffins together.  I added frozen blueberries (thawed) and then topped them with lemon zest and sugar before baking.
