Rainbow Salad

June 26, 2011

If I had this around all the time, I’d definitely eat enough vegetables.  The ingredients are so crisp and flavorful and the texture is a delight to eat.  I think I would make more dressing that what it calls for, and although the garlic is delicious in the dressing, it leaves a strong aftertaste.  I’d opt for less than a clove next time.

Grilled Lemon-Oregano Chicken Drumsticks

June 24, 2011

These were great, and after only 30 minutes of marinating.  After 24 hours of marinating, they are spectacular.  I used 1/2 tsp dried oregano and 1/2 tsp dried thyme in place of the 2 tbsp fresh oregano, but they are better with fresh herbs.
