Poached Chicken with Tomatoes, Olives, and Green Beans

This was tasty.  The chicken itself doesn’t have that much flavor, but the topping is good.  I probably would have added more seasoning to the poaching water next time.  I ended up cooking the chicken a bit longer than called for because it was thick.  It stayed juicy and tender enough to cut with a fork.

Baked White Polenta with Two Cheeses

Mmmm… this was a crowd favorite.  I used yellow polenta with cheddar and parmesan.  I also sautéed bell peppers, onions, and fresh corn in butter as a topping.

Taco Seasoning

For 1 lb. ground beef/turkey, mix together:

  • 4 tbsp cumin
  • 2 tbsp chili powder
  • 2 tbsp paprika
  • 1 tbsp oregano
  • 1 tsp coriander
  • 1/2 tsp salt
  • 1/2 tsp pepper
