Poached Chicken with Tomatoes, Olives, and Green Beans

This was tasty.  The chicken itself doesn’t have that much flavor, but the topping is good.  I probably would have added more seasoning to the poaching water next time.  I ended up cooking the chicken a bit longer than called for because it was thick.  It stayed juicy and tender enough to cut with a fork.
