Mexican Rice

This is the best mexican/spanish rice recipe I’ve found, but I added extra salt and chili powder (actually, a spice blend because I was out of chili powder); at first taste, it was a bit bland. I was skeptical about adding cheese, but it brought the flavors together well. Makes about 4 large servings.

Served it in tacos with a corn salsa I made by boiling and then cooling fresh corn and adding diced red onion, cilantro, lime juice, and salt.
