Gluten-Free Buttermilk Pancakes

Gluten-Free Buttermilk Pancakes

{Yields appx. 1 1/2 dozen}

2 eggs, lightly beaten

2 c. buttermilk (can be substituted with this: place 2 T. vinegar in a 2-cup measuring cup, then add milk to make 2 cups; allow to sit 5 minutes before using)

3 T. melted butter

1 tsp. vanilla extract

1 T. honey (or sugar)

2 1/3 c. Pamela’s baking mix (or any other gluten-free baking mix, if you prefer)

stick of butter for greasing the griddle

Preheat griddle to 350 degrees F, or place skillet over medium heat. Combine beaten eggs, buttermilk, butter, vanilla and honey in a large mixing bowl. Add baking mix and stir just until combined.
