Shortcut Banh Mi With Pickled Carrots and Daikon

I didn’t follow this whole recipe.  I just used the pickling instructions.

For the sandwich, I mixed up siracha mayo and added deli ham, salad greens, pickled carrots and radishes, and cilantro.
